This week on the ranch…
Melanie took the above photo, showing relaxed beeves on grass that, despite the snow remains green underneath. That’s May Mountain in the background, shrouded in clouds on an otherwise crisp, blue day. The holiday season is undoubtedly upon us, and the arrival of December only confirms it. We are grateful for fall stockpile this year, which continues to supply green for the animals we look after, and which produce delicious food and hearty meals for your table.
Daughter Linnaea put this beautiful roast together. Here’s her step by step: Stab a 1inch hole in top of roast and stuff with a clove of garlic. Season with salt, pepper, onions and 2 Tbsp of butter. Brown uncovered in Dutch oven at 400 for 20 minutes. Then add water halfway up sides of roast and a splash of red wine. Cover and cook at 200 degrees for 6 hours. Enjoy a warm kitchen filled with the hearty aroma of a beef roast!
It has perhaps been one of the busier “heading into winter” seasons we’ve had in recent years. Over the last few weeks, we have been purchasing pregnant mother cows scheduled to calve in the late spring. We’ve taken most of the mama cows to our ranch in the Lemhi Valley, one mountain range over. Because we don’t have corrals built yet over on the new place, we made it work with some temporary panels, haybales, and even an old school bus.

Dear Friends
Nature locked up the high country last night and threw away the key. Above the 7000 foot line, pure white was the order for today’s first dawn light. Trees, rocks and tundra were all the same with a blanket of pressed-in wind-driven snow.
It happens almost every year in this season. When we’re short a few cattle, this is the time to look for them; tracks are easy to spot and date, as are the wolves’ that track them.
