(Gluten Free, Grain Free, GAPS, Paleo Option, Egg Free, Nut Free, Soy Free, Refined Sugar Free)
This delicious 15-minute sockeye salmon recipe is full of warm, rich flavors. The salmon is pan fried in a buttery sauce with garlic, honey, and pineapple. Serve it with a fresh green salad or stir-fried vegetables for a light but filling meal!
- 2 completely thawed portion-sized pieces of a salmon fillet (see above for a video on cutting portions out of a whole filet!)
- 4 tablespoons Lifeline salted butter
- 2 cloves garlic (crushed and chopped)
- 2 tablespoons pineapple juice
- About ½ cup pineapple chunks (chopped into 1/4 inch thick slices)
- 2 tablespoons pure clover honey
- ¾ teaspoon salt
- Heat an 8-10 inch frying pan (we prefer cast iron, as it browns best and you don’t have to worry about scratching it) to just below medium-high heat. You may need to adjust heat as necessary throughout cooking, depending upon how hot your stove usually runs.
- Place the butter, garlic and pineapple juice in the frying pan. Allow the butter to melt and the mixture begin to sizzle a bit (about 3 minutes).
- Add the pineapple chunks, honey, and salt. Cook for about 2 more minutes, until the mixture is bubbling, the pineapple chunks are starting to soften, and the mix is a light brown color.
- Remove the skin from each fillet if you haven’t already, then place facedown in the bubbling sauce.
- Cover the pan and allow the fish to cook for about 3 minutes before flipping. If it isn’t browned well when you flip it, increase the heat a bit. If it seems to be browning too quickly, decrease the heat.
- Cover the fish again, then cook another few minutes until the bottom is browned well. If you aren’t sure if it’s cooked, check the temperature by inserting a cooking thermometer into the center of the fillet. If the temp reads at around 145 degrees F, the fish is done.
- Remove from heat and pour any remaining sauce in the pan over the top of the fish.
- Serve and enjoy!
